Title: Bridget Parker's Gingerbread (Cookies)

Yield: 72 Cookies
2 c Sugar (402 g)
1 c Water (240 g)
1/2 c Butter (113 g)
1/8 ts Ground cloves
1/2 ts Ground cinnamon
1/8 ts Ground mace
1/2 ts Coriander seeds
4 c Flour (480 g)
First, prepare the syrup. Put the water and the sugar in a small
saucepan. Heat until the sugar dissolves, stirring frequently. Add
the butter. Stir until the butter is melted. Reduce heat as necessary
so that the mixture does not boil over. Stir in the spices. Remove
from heat and allow to cool.
Preheat your oven to 350°F (180°C). Line baking sheets with baking
parchment (or thoroughly grease).
When the syrup is cool, pour it into a mixing bowl. Add flour one cup
at a time, stirring until each is fully combined before adding the
next one.
Shape cookies of about 1 tb of dough and place on the prepared baking
sheets.
Bake for 15 minutes. The bottoms should be golden brown and the tops
will still be light.
Allow to cool before eating.
