    Title: Ayam Limau Purut (Nonya Chicken Curry)

    4 tb Oil
    2 lb Chicken (1 kg); cut into
    -serving pieces
    1 sl Asam gelugur (optional)
    1/2 c Water (125ml)
    1 c Thick coconut milk (250 ml)
    --OR-
    1/2 c Coconut cream (125 ml);
    -mixed with:
    1/2 c Water (125 ml)
    4 Kaffir lime leaves
    1 1/2 ts Salt
    1 tb Fresh lime juice; up to 2 tb

    1 Galangal root (1-1/4" /
    -3 cm); sliced
    1 Lemongrass stalk; thick
    -bottom third only; outer
    -layers removed, inner part
    -sliced
    8 Red chilies; up to 10,
    -sliced
    2 md Onions; quartered
    3 cl Garlic; peeled and halved
    1 ts Turmeric powder

    Grind the spice paste ingredients in a mortar or blender, adding a
    little oil if necessary to keep the blades turning.

    Heat the oil in a wok and stir-fry the spice paste over medium heat
    for 7 minutes until fragrant. Add the chicken, asam gelugur, and
    water, and simmer for 10 minutes until the chicken is half cooked.

    Add the coconut milk and lime leaves and simmer, uncovered, for a
    further 10 minutes until the chicken is tender. Season with salt and
    fresh lime juice.
