    That and the silly-bugger way it does the reply tab. Of the five posts
    in today's packet 2 are from me, 2 are to me and one is a wild card. I'm
    not enough programmer to ever suggest a cause - or fix. Bv)=

    The system was called "Minnie" and every few months we'd have a Minnie- Fest where we'd get together for food, beverage and chin wagging. It
    was an early, local version of the Cooking Echo picnics. We still get together (those of us who haven't fallen off our twigs or relocated) on the second Wednesday of every month for food & beverage and catching
    up.

    Those were the days, weren't they? When I was stationed at Fort Hood
    in the 90s, I started running my own BBS. We used to have large
    meetups at a local reastaurant back then. I miss those days.

    Me too. But, truthfully the best thing about the "good old days is that
    they're gone. I look to the future with hope.

    Lee is retired from a position as head of IT for State Farm
    insurance and now works part-time as a hearse driver for a local
    funeral home. Just to have "something to do".

    I wish I was allowed to work but my docs have told me no due to my
    heart. I know it might sound strange but I miss working. I'd be happy
    to have even a part-time job.

    Guy sked me the other day if I'd retire completely if I hit a winner in
    the Lottery. Probably not. It gives me something to do besides pounding
    on this keyboard and hanging arund the house. Aside from the fact that
    I have always enjoyd helping people.

    My housemate hangs around the house all day. I often find him asleep
    in his chair in front of the boob tube. Gotta stay active. I've seen
    too many people I know who worked hard their whole lives and retired
    just sit in front of the TV and fall over dead in six months or so.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Marsha's Mom's Utah Funeral Potatoes
    Categories: Potatoes, Poultry, Cheese
    Yield: 8 Servings

    6 c Diced potatoes
    10 3/4 oz Condensed cream of chicken
    - soup
    1/4 lb Butter; melted
    1 c Sour cream
    2 c Cheddar cheese; grated,
    - divided
    1/4 c Grated onion (opt)
    Salt and pepper

    INGREDIENT NOTES: For the potatoes, it's best to bake
    russet potatoes wrapped in foil, then peel and dice them.
    If you want, you can substitute plain frozen diced (not
    shredded) potatoes. Let the potatoes thaw before using
    them in the recipe.

    Combine soup, butter, sour cream, 1 cup cheese, onion,
    salt and pepper. Mix well. Add the potatoes and stir
    gently until combined.

    Place potato mixture in a 2-3 quart casserole dish or 9"
    X 13" baking pan. Top with the remaining 1 cup cheese.

    Bake uncovered at 350oF/175oC for 30-45 minutes or until
    hot and bubbly.

    A lot of people put crushed corn flakes on top of the
    funeral potatoes. My mom doesn't do this, but I've eaten
    them that way and it does add a nice crunch. If you want
    to use the corn flake topping, mix 3 tablespoons butter
    with 3/4 cup crushed corn flakes and sprinkle over the
    potato mixture before baking. If you're planning to use
    a crumb topping, mix all the cheese in with the sauce and
    don't reserve any to sprinkle on top.

    I've not found any problems here.

    Title: Lazy Day Lasagna
    Categories: Pasta
    Yield: 6 Servings

    12 oz Cottage cheese
    2 c Mozzarella cheese --
    -shredded
    2 Whole eggs
    1/3 c Dried parsley
    1 ts Onion powder
    12 ts Dried basil
    18 ts Pepper
    1 qt Spaghetti sauce
    3/4 lb Ground beef -- cooked
    9 Pieces lasagna noodles
    1/4 c Water
    Parmesan cheese

    In large bowl mix first 7 ingredients until well blended; set aside.
    In medium bowl, mix together spaghetti sauce and ground beef. In
    12"x8"x2" baking dish, spread 3/4 cup meat sauce. Layer 3 uncooked
    lasagna noodles on top. Spread with half of the cheese mixture and 1
    1/2 cups meat sauce. Layer 3 more noodles on top of meat sauce.
    Spread with remaining cheese mixture. Top with remaining 3 noodles
    and remaining meat sauce. Pour water around edges of casserole. Cover
    tightly with foil. Bake in 375? oven 45 minutes. Uncover and bake15
    minutes more or until noodles are tender. Let stand 10 minutes before
    serving. Serve with parmesan cheese.
