Title: Adraki Chilli Chicken

Yield: 1 Batch
300 g Boneless chicken
1 ts Ginger; chopped
1 Ginger slice (1")
4 Green chillies; up to 5 -OR-
1 Serrano; up to 2
2 Jalapenos; up to 3, or to
-taste
1 ts Kashmiri red chilli powder
1 ts Oil
1 cl Garlic (1 ts); chopped
1 ts Dark soy sauce
1 ts White vinegar
1/2 ts Ground black pepper
1 ts Garam masala
Salt; to taste
2 ts Fresh coriander leaves
1 md Onion; diced
1 md Green bell pepper; diced
Heat oil in a non-stick pan. Add in the chopped ginger, chopped
garlic, sliced green chilli, and sauté well.
Add in the chicken and sauté well. Then add chillies, black pepper,
red chilli powder, garam masala powder, salt. Sauté well.
Add in onion and bell pepper and toss well
Add soy sauce, vinegar, and sauté well until chicken is cooked. Not
dry but not pink. You'll know if it pulls apart well.
Lastly add chopped coriander and toss well. Remove it in a serving
bowl, garnish it with parsley and ginger julienne and serve hot.
Note:
I personally find parsley to be useless as hell so I skip it and use
the coriander/cilantro alone as a garnish. Fresh ginger can be a bit
much for many people so it's ok to leave it out. If you leave it out,
substitute the 1 ts garlic for 1 ts ginger and garlic paste.
