Left-over chicken; turkey,
- or roast
Cheddar; Swiss, or
- Monterey jack cheese
Oil; for cooking
Onions; chopped
Corn tortillas
Lay tortilla out, place pieces of seasoned chicken (or turkey, or
beef) on edge of tortilla and sprinkle with cheese of your choice.
Onions can also be added if you desire. Roll and secure with
toothpick. Fry in a small amount of hot oil, turning until desired
crispiness--drain on paper towels.
