3 tb Butter
1 md Onion; sliced
1 cl Garlic; minced
2 lb Zucchini (4 c); grated
1 1/2 ts Salt
1/4 ts Pepper
2 Eggs; beaten
1/2 c Milk
1/2 c Cheese; grated
1/2 c Potato chips; crushed
Melt butter in large skillet, saute onion & garlic until golden. Add
zucchini, salt & pepper & cook covered for about 7 minutes.
Beat eggs, milk & cheese. Drain zucchini mix in a sieve. Add to
egg-milk mixture. Put in shallow buttered casserole dish & sprinkle
with potato chips. Sprinkle top with paprika & bake at 350?F for 20
minutes or until formed & set. Serve at once.
