Title: Fiesta Scrambled Eggs

Yield: 6 servings

1 tb Oil
1/2 c Chopped onion
1/4 c Chopped red bell pepper
1 Jalapeno pepper, seeded and
- chopped
8 sl Bacon; cooked, crumbled
8 lg Eggs; lightly beaten
1 c Shredded Cheddar cheese;
- divided
1/2 ts Salt
1/8 ts Pepper
Salsa

In a large cast-iron or other heavy skillet, heat oil
over medium-high heat. Add onion and peppers; cook and
stir until tender, 3-5 minutes. Sprinkle with bacon.
Pour eggs over the top; sprinkle with 1/2 cup cheese,
salt and pepper. Cook over medium heat, stirring
occasionally, until eggs are completely set. Sprinkle
with remaining 1/2 cup cheese. Serve with salsa
