Title: Zucchini Omelet

Yield: 2 Servings

1 md Zucchini; thinly sliced
1 md Onion; sliced
1 1/2 tb Olive oil
2 tb Water
1/2 ts Fresh basil
3/4 c Mild cheese; shredded
Parmesan cheese

Simmer zucchini and onion in oil and water until tender. Combine with
basil and cheese. Place this mixture inside a 4 egg omelet. Sprinkle
with Parmesan.
