    Title: Canadian Souffles

    Yield: 6 Servings

    1 tb Butter
    3 tb Parmesan cheese; grated
    6 lg Eggs; separated
    8 oz Cream cheese; softened
    1 c Grated cheddar cheese
    1/2 c Sour cream
    3 tb Chopped pimento
    1 tb Chopped chives
    3/4 ts Dry mustard
    12 oz Canadian bacon; diced

    Butter bottom and sides of individual souffle dishes and
    sprinkle with Parmesan cheese. Beat egg yolks until thick
    and lemon colored, about 5 minutes. Beat in cream cheese,
    cheddar cheese, sour cream, pimento, chives and mustard.
    Using clean, dry beaters, beat egg whites until stiff.

    Gently, fold into yolk mixture; fold in Canadian bacon.
    Turn souffle into souffle dishes. Bake at 350A�F/175A�C
    25-30 minutes.

    Souffle is done when a knife inserted in center comes
    out clean.

    Title: Canadian Bacon-Onion Quiche
    Categories: Vegetables, Cheese, Pork, Pastry
    Yield: 8 servings

    1 c A-P flour
    3/4 ts Salt; divided
    1/2 c + 3 tb cold butter; divided
    1/2 c Small-curd cottage cheese
    3 lg Sweet onions; sliced (6
    - cups)
    4 oz Canadian bacon; diced
    1/4 ts Pepper
    3 lg Eggs; lightly beaten
    1 c Shredded Cheddar cheese

    Set oven @ 350ºF/175ºC.

    In a small bowl, mix flour and 1/4 teaspoon salt; cut in
    1/2 cup butter until crumbly. Gradually add cottage
    cheese, tossing with a fork until dough holds together
    when pressed. Shape into a disk.

    On a floured surface, roll dough to a 1/8-in.-thick
    circle; transfer to a 9 pie plate. Trim crust to 1/2"
    beyond rim of plate; flute edge.

    In large skillet, heat remaining 3 tablespoons butter
    over medium heat. Add onions; cook and stir until golden
    brown. Stir in Canadian bacon, pepper and remaining 1/2
    teaspoon salt. Remove from heat; add eggs and cheddar
    cheese. Pour into crust.

    Bake on a lower oven rack 40-45 minutes or until a knife
    inserted in the center comes out clean. Let stand 10
    minutes before cutting.
