2 1/2 c Garbanzo beans
1/2 c Dry pasta
1 c Fresh tomatoes; chopped
1 lg Onion; chopped
1 c Carrots; diced
1 c Celery; minced
1 c Eggplant; chopped
1 c Pepper; chopped
1 cn Tomato paste
4 c Water
Basil
Oregano
Garlic
Pepper
Sauté onions, pepper, garlic, and spices in oil. Add other
vegetables and allow to steam in small amount of water. Stir in
beans. Add stock and simmer 15 to 20 minutes. Add tomatoes and paste
and simmer 5 minutes. Add spice and top with cheese.
