    Title: Sea Salty & Pepper Potato Chips
    Categories: Five, Appetisers, Potatoes
    Yield: 4 Servings

    3 c Oil
    3 c Water
    1/4 c Sea salt; divided
    2 lg Potatoes; thin sliced
    2 tb Ground black pepper

    Heat oil in a deep-fryer or large saucepan to 375oF/190oC.

    Stir water and 2 tablespoons sea salt together in a bowl
    until salt is dissolved. Place potato slices in water.

    Transfer 2 handfuls of potatoes using tongs from water to
    hot oil, cover the pot or fryer, and cook in hot oil until
    chips are crispy and light brown, 5 to 7 minutes. Transfer
    to a paper towel-lined plate. Repeat with remaining
    potatoes.

    Place chips in a large bowl and sprinkle remaining salt
    and pepper over the top; toss to coat.

    Title: Potato Chip Fudge
    Categories: Five, Chocolate, Potatoes
    Yield: 64 servings

    12 oz Semisweet chocolate chips
    14 oz Can sweetened condensed
    - milk
    1 ts Vanilla extract
    2 c Coarse crumbled potato
    - chips

    In a medium saucepan, melt chocolate chips over
    medium-low heat, stirring constantly. Be careful not to
    burn. When chocolate is melted, reduce heat to low and
    add sweetened condensed milk and vanilla; stir until
    well blended.

    Remove from heat and immediately add crumbled potato
    chips. Stir gently to blend and pour into an 8-inch
    square baking dish that has been coated with cooking
    spray. Cover and cool in the refrigerator until set.
