    Title: Gerrity's Grocery Quick-as-a-Wink Pecan Pork
    Categories: Pork, Nuts, Citrus, Vegetables
    Yield: 4 Servings

    1/3 c All-purpose flour
    1 ts Salt
    1/2 ts Black pepper
    4 (6 oz ea) boneless pork loin
    - chops; pounded 1/4" thick
    6 tb Butter; divided
    1/4 c Fine chopped onion
    1/4 c Chopped pecans
    1/4 c Honey
    1/4 c Chicken broth
    1 ts Lemon juice

    In a shallow dish, combine flour, salt, and pepper.
    Dredge chops in mixture, shaking off excess.

    In a large skillet over medium heat, melt 2 tablespoons
    butter. Add chops and saute 5 to 6 minutes, or until
    brown on both sides. Remove to a platter and cover.

    Melt the remaining butter, add onions and pecans, and
    cook 5 to 6 minutes. Add remaining ingredients and cook
    3 to 4 minutes, or until hot and bubbly.

    Spoon sauce over pork chops and serve.

    Title: Sweet & Spicy Pecan Bacon
    Categories: Five, Pork, Nuts, Chilies
    Yield: 6 Servings

    1 lb Thick-sliced bacon
    1/4 c Fine chopped pecans
    3 tb Brown sugar
    1 3/4 ts Chilli spice mix

    Preheat oven to 425ºF/220ºC.

    In a small bowl, mix together the brown sugar and chilli
    spice.

    Prepare 2 large (about 15" x 10") baking pans or rimmed
    cookie sheets by lining with aluminum foil.

    Arrange the bacon slices side-by-side in a single layer in
    the 2 pans.

    Bake the bacon alone for about 10 minutes.

    Remove from oven and carefully drain off accumulated fat.

    Sprinkle brown sugar mixture over the slices. Sprinkle
    slices with chopped pecans.

    Bake for 8 to 10 minutes longer until crisp.

    Transfer bacon to stacked paper towels to drain excess fat
    and to crisp up a little more.

    I've made this a few times now and I love it. It pairs
    really well with pancakes, waffles or French toast. It's
    great when pancakes have some nuts sprinkled on top and
    bacon on the side. In this scenario, we've just adhered
    those nuts to the bacon. I've tried this with pecans,
    cashews and even peanuts. If you love bacon, nuts and
    having fun, you're bound to love this combination.
