    Title: Hoirino me Selino: Lemon Pork w/Celery

    3 1/4 lb Boneless pork; in 2" chunks
    4 1/4 lb Celery with leaves
    2 md Onions; fine chopped
    3/4 c Olive oil
    1/4 c Fresh squeezed lemon juice
    1 tb Salt
    1/2 ts Pepper
    3 c To 4 cups of water

    This stew is a favorite combination of tastes... meat,
    in this case pork, stewed with a green vegetable
    (celery), doused with lemon juice before serving. It's
    easy and delicious.

    This is one of the few Greek recipes that calls for
    thick stemmed celery, and not wild celery.

    Trim and wash the celery. Cut in long strips and cut
    strips into 1 1/2" to 2" pieces. Transfer to a saucepan
    with cold water to cover, bring to a boil, and boil for
    10 min. Drain and set aside.

    In a dutch oven or stew pot, saute the onion in hot oil.
    When the onion is soft, add the pork and 3 cups of water.
    Bring to a boil, cover, and cook over medium heat for 45
    minutes. Add celery, salt, and pepper, reduce heat and
    simmer for 25 minutes. Do not stir the pot. Shake gently
    from time totime to prevent meat from sticking.

    Add lemon juice and shake the pot gently. Turn off heat,
    cover, and let sit for 10 minutes before serving.

    Note: If more water is needed, add boiling water.

    Yield: serves 8

    Title: Beef w/Celery
    Categories: Oriental, Vegetables, Beef
    Yield: 4 Servings

    1/2 lb Flank steak; sliced thin
    - across grain
    ds Pepper
    1 tb Soy sauce
    dr Sesame oil; to a few drops
    1/4 ts Sugar
    8 (to 10) celery ribs; sliced
    - diagonally in bite sized
    - pieces
    1 md Carrot; peeled, sliced thin
    - diagonally in bite sized
    - pieces
    2 cl Garlic; peeled, crushed
    1/4 ts Salt
    4 tb Peanut oil
    1/4 c Water
    1 tb Tapioca starch

    Marinate beef with tapioca starch, light soy sauce,
    sugar, sesame oil, pepper, for 10 minutes.

    Use HIGH heat to heat up the wok or skillet. Add 2
    tablespoonful of peanut oil and wait until smoke begins
    to rise. Put in celery, carrots, salt and 1/4 cup of
    water. Stir mix and cover with a lid. Cook with HIGH
    heat for 3 minutes.

    Remove vegetables to a plate. Wipe wok clean with a
    towel, and heat up the wok.

    When the wok is hot, add 2 tablespoonful of peanut oil.
    When hot, put in garlic to brown for 1 minute, then add
    beef. Stir fry until color of meat changed. Return
    vegetables, mix and serve hot.
