I'm not sure if I mentioned this before, but as an interim measure you can actually power your Apple II with an ATX power supply. So long as it provides -5V some of the newer ones don't have it.

No, you didn't mention that, but getting the connectors sorted would
    be a pain.

Ahh not as much as you might think. First question would have to be what connector do you have on the motherboard? The row of pins or the squarish looking thing?

Despite all the wiring hanging off it, all you're looking for is +5 +12 GND all
of these are in the regular peripheral connectors. -5 -12 which will be buried in the motherboard bundle. After you've got that bit sorted, you need to short the green wire and ground with the flux capacitor, and as soon as you apply power the thing will come to life so long as their is a load on the system. I usually plug in an HD during initial testing.

Depending how long time the project becomes you can use a switch in the green to gnd line to turn it on/off. And you could at this point cut all the unused wiring off.

I don't want to cut any wires or remove the connector, in case I get
    a proper Apple supply.

Well its all optional. Depends on the level of neat freak you have. And if its
a power supply that has other uses, you need a spare one? :P

Hmm, it's not so much the "neat freak" as being able to have it all
sorted mechanically, which is something I struggle with. So using

I suppose and adapter could be rigged. Having just turfed all the old mobo's out :P Sweat a power connector off a motherboard, and hook the appropriate wiring up to an Apple mobo plug... Otherwise I'd take the smallest ATX supply there is and make it sacrificial. The II or IIe only need ~65W
